The Artisan Bagel Baker returns!

I dunno, I go out to work for four hours and come back to find the Artisan Bagel Baker has been busy in my kitchen!



Yes indeed, hubby has found his yeast-flavoured baking wings.  Well and truly!

Today - get this - he ventured to produce these four beautiful plain (if plain is a satisfactory description, which I really think perhaps it isn't) bagels ....



along with four beautiful Red Pepper, Olive & Parmesan bagels.  Oh yes, you read that correctly.  Look at this 'ere picture and prepare to dribble, all ye bagel fanciers out there.


*happy sigh*

I was greeted, upon returning home, by the questions "would you like a cup of tea?" and "are you hungry?", which last loaded question I answered with "why, what's on offer?".   So we promptly road-tested one of the Red Pepper, Olive and Parmesan bagels with cream cheese.  Oh and it was T.D.F.  (Easily translated as "to die for").

Apparently, hubby had made the flavoured bagels by creating a tapenade of sweet peppers, green queen olives, parmesan cheese and olive oil - which he then mixed (with some difficulty, apparently) into the bagel dough.  He saved a little bit of parmesan for sprinkling just before they went into the oven.  Gorgeous!

Now, we're going to invite suggestions for bagel flavours.  What flavour would YOU like to see in a bagel?

New denomination of Bagel!

Just feast your eyes on this little hoop of deliciousness ...

it's the new denomination of Bagel from the Artisan Bagel Baker (or hubby, as he's also known) - the Sundried Tomato, Roasted Red Pepper and Chorizo bagel.  Which shall also be known as "the pizza bagel", according to our son. *beam*

Think it looks delicious?  Well, it tasted even better than that.  *grin*

Now that's what I call a successful day's meals

Some days, I look back at the meals we've had over the course of that day and feel like I could have done so much better.

However, yesterday wasn't one of those days I'm pleased to say.

Hubby got cracking early on the bagels and before we knew it, there was a new batch of bagels all ready for consumption.  He reckons he let them get a little over-browned, but I like them like that - adds flavour!  Mind you, I'm the sort of person who likes her toast to be browned as opposed to just warm bread.

We had a new batch of free range eggs and a new packet of Asda's cheap as chips smoked salmon offcuts (88p! Can't say fairer than that), so all that just begged to be made into scrambled eggs with smoked salmon, on a bagel.  Delicious!

I had plans to make Mary Moh's Sweet Potato & Carrot soup for lunch, so once we'd got back from our trip to the library, greengrocer (where Hubby picked up two duck eggs and more plums) and charity shops, I got started.

I didn't have any garlic oil, so as a substitute, I began the process by frying a sliced clove of garlic.  Somehow a small chopped red chilli crept into the mix at the same time.  Well, it seemed like a good idea!

The soup is so ridiculously easy to make and smells simply gorgeous when it's cooking.  I digressed from the recipe once more, in that I pushed the blitzed soup through a sieve - just to emphasise it's velvetiness.  Goodness, but that soup is really delicious - and to think, it's doing you good too.

So, flushed with success, I set to and made a batch of plum chutney - but more on that later.

Dinner that evening was an easy one, but a family favourite.  Sausage & Mozzarella Pasta Bake.  It's grown a little from the original, as the recipe was one of Jamie Oliver's "Food for a Fiver" for Sainsbury's.   I felt that the tomato sauce was quite weak in the original recipe, plus the emphasis was too heavily on the broccoli, so the following recipe has resulted, which is always greeted with cheers whenever the question "what's for dinner tonight, Mum?" is asked.


Sausage & Mozzarella Pasta Bake

Serves 3 hungry people, or 4 people if you're serving dessert too!  Can also be served with a green salad, although we tend not to.

Ingredients :

1 pack of 8 sausages (Cumberland preferred).
Around 300g of broccoli (depending on how much you like it)
200-300g Penne Pasta
3 balls of Mozzarella (quantity depends on how big your casserole is!)
400g tin tomatoes
A small red chilli
An onion, chopped
A clove of garlic, chopped
Half a tsp oregano
Worcester sauce
1 tbsp tomato ketchup
Half a tbsp tomato puree
Freshly ground black pepper
Salt
1 tablespoon of olive oil

Method :

1.  Place the sausages onto a baking tray and bake at 190deg C for 25mins or so, or until they are brown.

2.  Put a large saucepan of water on to boil, with salt added.  Once boiling, add the broccoli florets and cook for 3 minutes, then remove with a slotted spoon, retaining the cooking water.

3.  In another large pan, or deep frying pan, begin to make the sauce by sweating the onions until they gain a golden colour and are transparent.  Then add the garlic, oregano and chilli and cook for a minute or so more.

4.  Add the tin of tomatoes and allow to heat through, adding a shake or two of Worcester Sauce, the tomato ketchup and the tomato puree.  Leave to simmer while the flavours combine, then season and taste before the broccoli is added, to heat through.

5.  Fire up the heat under the broccoli water and once boiling, add the Penne pasta.  Cook for slightly less than recommended on the packet, retaining a little bite.  Drain and add to the sauce.

6.  Slice the sausages into four and add to the sauce.  Mix to combine carefully, so as not to break up the broccoli, then decant into a casserole dish.

7.  Slice the mozzarella and lay over the top.  Bake at 190deg for around 30 minutes, or until the cheese is browned and bubbling.

Serve, to the acclamation of all.  :)

Bagels!

I had an interesting little discussion with my friend Jane this morning, who said she knew of a baker who reckoned you couldn't cook bagels at home, because you need a steam oven.  ~scratches head~  Well, we seem to be managing it!

Mind you, I say "we", but it is in fact Hubby who has become the Chief Bagel Baker.  The original recipe came from my friend Melanie Boxall - Quiddity - thanks, Mel!  He's tweaked the recipe and changed from dry yeast to fresh yeast and now thinks he's got the perfect recipe.  So - as he appears to have perfected it - here it is (by popular demand!).  This is the recipe for the basic plain bagel.  We have tried cinnamon & raisin (which I recommend) and have got it in mind to try cheese & onion bagels, using the fried onion pieces you get for sprinkling on salads.

BAGELS

Makes 8-10 (depending on how big you make each individual bagel)

Ingredients :

13.5 fl oz of warm water (112-115 deg F)
3 tablespoons sugar (normal granulated is fine)
15g fresh yeast (available from your local Supermarket's bakery - just ask for some and you should get it for free) if using dried yeast, 2 teaspoons (7 grams).
4.5 cups of strong bread flour
1 tablespoon of salt
1 egg, beaten with 1 tablespoon of water

Method :

1.  Start the yeast, by mixing the yeast and sugar with the water, then leaving to froth up (around 3 minutes).

2.  Decant into a large bowl and add half the flour and the salt, mix, then add the remainder of the flour.

3.  Knead well until smooth, cover and allow to rise.



4.  Let rise until doubled in size - about an hour in a warm kitchen.

5.  Divide into equal sized balls.  Then press down with a finger in the centre of each ball, making the customary hole in the middle of the bagel.

6.  Set aside and allow to rise again for 10-20 mins.

7.  Place a large pan of water on to boil, pre-heat your oven to 200deg C (fan) and prepare the beaten egg.



8.  Boil the bagels, 2-3 at a time, taking care to handle them gently so that they don't deflate, for 45 seconds, flipping over halfway through.  Drain well.



9.  Prepare a baking tray with greaseproof or parchment paper, then lay the bagels on the paper and glaze with the egg mix.

10.  Bake for 20 minutes, turning the tray half way through if your oven bakes hotter at the front than at the back - like ours does!


11.  Allow to cool.

The bagels are gloriously chewy, with the loveliest of fluffy insides.  I've discovered they're perfect with cream cheese and ham, cream cheese and smoked salmon, scrambled egg and smoked salmon, cheese and home made chutney, home made jam, marmite, they're just perfect for dunking in a bowl of soup - the possibilities are endless.  They also make great packed lunch sandwiches for schoolboys.



Ours are supposed to last for some 2-3 days, however as yet they have yet to get beyond 2 days, because we've eaten them all!
